• medium yellow onion, diced
  • 2 medium carrots, diced
  • 1 large celery stick, diced
  • 2 medium-sized chicken breasts – cut in strips (or, 1 pack of chicken tenders)
  • 1/2 cup chopped Italian parsley
  • 1 Tbsp butter
  • 4-6 Tbsp Milanese Gremolata Infused Olive Oil, plus more to taste
  • salt and pepper, to taste
  • (Optional) 1 anchovy fillet or 1 tsp capers
  • (Optional) 1/2 Tbsp Cayenne Chili Fused Olive Oil
  • fresh pasta for 2-3 people


  1. Melt butter in a frying pan over medium heat, add 1-2 Tbsp Milanese Gremolata Infused Olive Oil
  2. Saute vegetables until almost soft – add Cayenne Fused Olive Oil now if you want a bit of heat
  3. Add salt and pepper to taste
  4. Remove vegetables from frying pan and set aside
  5. Season the chicken with salt and pepper, then fry with Milanese Gremolata Infused Olive Oil (2-3 Tbsp depending on pan size)
  6. If adding anchovy or capers, add to chicken now and stir thoroughly to incorporate
  7. When chicken is brown on both sides, mix vegetables back in to the pan and stir/toss thoroughly to mix
  8. Drizzle with additional Milanese Gremolata Infused Olive Oil and add chopped parsley
  9. Toss with fresh pasta and enjoy!
