Ingredients:
- medium yellow onion, diced
- 2 medium carrots, diced
- 1 large celery stick, diced
- 2 medium-sized chicken breasts – cut in strips (or, 1 pack of chicken tenders)
- 1/2 cup chopped Italian parsley
- 1 Tbsp butter
- 4-6 Tbsp Milanese Gremolata Infused Olive Oil, plus more to taste
- salt and pepper, to taste
- (Optional) 1 anchovy fillet or 1 tsp capers
- (Optional) 1/2 Tbsp Cayenne Chili Fused Olive Oil
- fresh pasta for 2-3 people
Directions:
- Melt butter in a frying pan over medium heat, add 1-2 Tbsp Milanese Gremolata Infused Olive Oil
- Saute vegetables until almost soft – add Cayenne Fused Olive Oil now if you want a bit of heat
- Add salt and pepper to taste
- Remove vegetables from frying pan and set aside
- Season the chicken with salt and pepper, then fry with Milanese Gremolata Infused Olive Oil (2-3 Tbsp depending on pan size)
- If adding anchovy or capers, add to chicken now and stir thoroughly to incorporate
- When chicken is brown on both sides, mix vegetables back in to the pan and stir/toss thoroughly to mix
- Drizzle with additional Milanese Gremolata Infused Olive Oil and add chopped parsley
- Toss with fresh pasta and enjoy!
