We recently brought Saba in to the store – and we’ve had a few people ask:

“well, what is it?”

Saba is balsamic vinegar, before it becomes balsamic vinegar. It is a syrup made from cooked down Trebbiano grapes that are then bottled right away, instead of aged. While it’s been around as a condiment for ages, it’s only really started getting attention on this side of the world in the last few years or so.

What does it taste like? Sweet, very grape-y, and not at all pungent. Think liquid grape jelly. It’s fantastic for desserts, and pairs quite well with game meats or poultry. Did we mention it’s fantastic with pork, too?
